Ingredients:

Cake

  • 2 cups of flour
  • 2 tsp of baking powder
  • 1 tsp of baking soda
  • 2 tsp of cinnamon
  • 1/2 tsp of nutmeg
  • 1 tsp of salt
  • 3/4 cup of sugar
  • 3/4 cup of brown sugar
  • 3 eggs
  • 3/4 cup of vegetable oil
  • 1 tsp of vanilla
  • 2 cups of grated carrots
  • 1 cup of pineapple juice (canned)
  • 1/2 cup of chopped pecans

Icing

  • 1 x 8 ounce package of cream cheese
  • 1/4 cup of butter
  • 1/2 tsp vanilla
  • 1 cup of icing sugar

Instructions:

  • Grease and flour one 13x9 inches or 2x8 inches pan
  • Mix dry ingredients
  • Mix eggs, sugar, oil and vanilla. Pour over dry ingredients. Stir until just moistened, then add carrots, pineapple and pecans.
  • Spread into prepared pan
  • Bake at 350° for 40 minutes, let cool
  • Spread with icing
